Recipe: Spring Salad
Spring is here, and with it comes an abundance of fresh, vibrant greens. Some already ready to harvest! This season, we’re making a simple spring salad that highlights the freshest produce coming out of Good Cheer’s Farm. Our Spicy Salad Mix is perfectly complemented by crisp radishes and bright spring onions. It’s a dish that captures the the season: fresh, flavorful, and best enjoyed on a sunny spring day.
Ingredients:
For the Vinaigrette:
2 Spring Onions, finely diced
Salt and black pepper
¼ cup lemon juice plus 1 teaspoon zest
2 teaspoons Dijon mustard
6 tablespoons olive oil
For the Salad:
Salt and black pepper
4 handfuls salad greens
1 bunch small radishes trimmed and halved
4 eggs, boiled for 7 to 8 minutes, then cooled, peeled and halved
1 cup fresh mixed herbs, such as tarragon, basil, mint or dill
Instructions:
Make the vinaigrette: Put spring onions in a small bowl, and add a pinch of salt, the lemon juice and zest, and mustard. Stir until the salt dissolves, then whisk in olive oil. Taste, and add more salt and pepper to taste.
Start preparing the salad: Put salad leaves in a large mixing bowl, salt very lightly and dress with vinaigrette, saving a few spoonfuls to drizzle over top. Divide among individual plates or arrange on a platter. Scatter radishes over leaves. Arrange egg halves over top. Season eggs with salt and pepper.
Top with herbs. Drizzle remaining vinaigrette over salad and serve.
