Summer Recipes - Baked Zucchini Fries
The most common recipe you may have for zucchini is zucchini bread. While that works well as a healthier dessert or popular brunch option, what if you are in the mood for a savory snack? Zucchini are a great source of potassium and vitamin A, and baked zucchini strips are lower in calories than the deep fried version, as well as being much easier to make at home.

- Cooking spray (an olive oil mister also works well for this)
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan
- 2 eggs, beaten
- 3 zucchini - ends trimmed, halved, and cut into 1/2 inch wide strips
PreparationPreheat oven to 425 degrees F. Cut off the ends of the zucchinis, slice them in half, and cut them into 1/2 inch wide strips. Line a baking sheet with aluminum foil and lightly spray with cooking spray. Mix together bread crumbs and Parmesan cheese in a shallow bowl. Whisk eggs in a separate bowl.CookingWorking in small batches, dip the strips into the egg mixture and shake off any extra. Roll thoroughly in the bread crumb / Parmesan mixture, pressing a bit to make sure the coating sticks as well as possible. Transfer the coated strips to the baking sheet and place in the oven. Cook for 20-25 minutes or until golden brown, making sure to turn them once about halfway through cooking. Serve as a snack or a side to a meal. Feel free to sprinkle some paprika, garlic salt or pepper into the bread crumb mixture for added flavor!
