Summer Recipes - Cucumber, Tomato, & Red Onion Salad

While the easiest way to prepare cucumbers is to slice and shake some salt over them as a snack, adding them to a salad sounds more exciting. Unlike the past two recipes that involved grilling, this cucumber salad involves no cooking. The hardest part is the preparation, which only involves slicing and dicing the main ingredients. If you have some cucumbers, tomatoes, and red onions laying around, this recipe serves as a great healthy lunch or side dish.   • 1/2  small red onion, chopped
  • 1 cucumber, diced
  • 1 pound of vine ripe or Roma tomatoes (any tomato works fine)
  • 2 tablespoons of olive oil (or you favorite oil)
  • 2 tablespoons of lemon juice OR vinegar
  • Salt & pepper to taste

Preparation (5-10 minutes)First, make sure to wash all the vegetables before any cutting is done. The best part about this salad is how easy it is to put together. If you prefer more crunch, you can add more cucumber and onion. If tomatoes are your thing, then slice a few more. Thinly sliced, diced, or chopped into larger pieces - make the salad how you prefer to eat it!Combine all the ingredients into a bowl and mix. Feel free to add more olive oil, lemon juice, or any other dressing to your liking.4 servings.Optional: Add crumbled feta cheese to make it a quick and healthy lunch!
