Summer Recipes - Grilled Garlic Scapes
Almost all of us have used garlic in a few of our recipes, but what about garlic scapes? If you're wondering what relationship they have to garlic, they are the long leafless stalk that grows from the garlic bulb. Scapes are known for their less intense and brighter garlic flavor. They are normally cut off to allow all of the garlic's energy to go into producing a better bulb. Like green onions, they are also perfectly edible raw, but have more of an asparagus-like texture. They're great chopped in salads, or added to a dish where you would normally use garlic. Or, try this easy side dish!
Similar to the recipe for sauteed kale with garlic, there are very few ingredient required to make grilled garlic scapes, and it only takes about 10 minutes to complete. Serves 4, or more as a side dish. You will need the following:
- 1-2 pounds of garlic scapes
- 2 tablespoons of olive oil (or your favorite oil)
- Salt and black pepper to taste
- Optional: red chili flakes to taste, herb salt, or another favorite seasoning
PreparationWash and dry the garlic scapes to remove any dirt. Cut off the hard bits at the ends but leave the scapes whole. You may need to cut them to fit the size of the pan you are using. Massage them with oil and sprinkle with salt & pepper.CookingWarm olive oil over low-medium heat in a large pan or skillet. Then add the garlic scapes and cook until they become golden brown on both sides and crispy green, stirring occasionally. Feel free to add red chili flakes or other seasonings.Serve garlic scapes hot with more salt & pepper or olive oil. They work even better as a side dish in place of green beans!
