Volunteer Recipe:Oatmeal Cake

Oatmeal Cake 

Preheat oven to 350°

Butter or oil either a 10 inch round cake pan or a 7x11 inch rectangle cake pan

Ingredients:

1 1/4 c boiling water

1 cup quick oats

1/2 cup butter, softened (or substitute 1/3c oil)

1 cup white sugar

1 cup brown sugar

2 large eggs 

1 tsp cinnamon

1/4 tsp cardamom 

1 tsp vanilla 

1/4 tsp salt

1 tsp baking soda 

1 1/3 cup all-purpose flour 

 

Directions:

(1) In a small bowl, pour boiling water over quick oats, stir. Set aside to cool.

(2) In a large mixing bowl, cream together butter (or oil) with sugars, eggs, spices, vanilla

(3) Mix in cooled oats 

(4) Stir in salt, baking soda, flour

(5) Stir well and pour into prepared pan.

Bake for 40-45 minutes until pick inserted into center comes out clean and top is golden brown.

Optional Additions/Variations:

* Substitute all brown sugar or 1 1/2 brown + 1/2 maple syrup if you prefer.

* Add 1/4 c candied ginger or 1/2 c golden raisins, or 1/2 c chopped walnuts, or 1/2 capple slices. (Or a combination or all.)

* Add 1 Tbsp fresh orange zest to the cake and make the orange glaze below to top the cake.

Toppings

Orange Glaze

Ingredients:

1/2 c fresh squeezed orange juice 

1/2 Tbsp orange zest 

1/4 to 1/2 cup butter, melted

1/2 to 1 cup powdered sugar

1/2 to 1 tsp cardamom 

1/2 to 1 tsp cinnamon 

Directions:

Melt butter, add spices, powdered sugar, zest & stir together. Slowly add o.j., stirring to keep smooth.  

Pour over the hot cake.

Citrus-Honey Sauce

Ingredients:

3 Tbsp ghee, softened (or substitute softened butter)

1 Tbsp honey

1 tsp fresh squeezed orange juice or lemon juice

Stir together well & spread over cake.

Orange Cream Cheese Frosting

Ingredients:

3/4 c whipped cream cheese, softened (6oz)

2 Tbsp fructose, Sucanant, Sugar turbanado, or powdered sugar 

2 Tbsp fresh squeezed orange juice

Fresh zest from one orange, finely grated 

Directions:

Mix all ingredients together in a small bowl with an electric beater or fork until smooth.

Spread over the cake with a knife or serve on the side.

Variation:

An equal amount of soy cream cheese or soy sour cream can be substituted for the cream cheese. Use only 1 tsp of fresh lemon juice, half the zest, and the same amount of sweetener.
